Large flat mushrooms - none of your tasteless button mushrooms for this. Fry them in large pieces for a couple of minutes, then add the post-modern sauce and stir and cover while they steam and sizzle and caramelise.

As an advanced excercise, you could fry some slices of haloumi cheese with the mushrooms, but watch out for the salt level - reduce the proportion of tamari in the mix. With the haloumi, this is a rich dish and needs to be eaten in moderation with rice and red wine.
